BREAD UTTAPAM

 

Uttapam is a popular south Indian snack. Traditionally it is made with rice and lentil batter. Bread Uttapam is instant and easy to make. Uttapam is a thick dosa or pancake, with vegetables cooked over a skillet. It’s served hot with your choice of chutney. I do serve it with coconut chutney or green chutney.
Preparation time: 10 minutes
Cooking time: 5 minutes
Serves: 2-4
Ingredients

  • Cooking oil
  • 2 tbsp fresh coriander finely chopped
  • 3 slices of white bread
  • 3 tbsp of semolina
  • 3 tbsp of all-purpose flour
  • 2 tsp of ginger finely shredded or chopped
  • 1 green chili finely chopped, (adjust to your preference)
  • ¼ cup tomatoes finely chopped, remove the seeds
  • ¼ cup bell peppers, finely chopped
  • ¼ tsp cumin seeds
  • 1 tsp salt
  • ¼ cup yoghurt
  • ¼ cup water or as required
  • 1 onion, finely chopped

Method

  • Remove the crust from the bread and cut them into small pieces.
  • In a blender add bread, semolina, salt, yoghurt, flour, and water, blend to a thick and smooth batter.
  • Pour the batter into a bowl and add the remaining ingredients, cumin seeds, bell peppers, tomatoes, coriander, green chili, ginger, mix it well. Batter shouldn’t be too thick, and shouldn’t be runny.
  • Heat the skillet over medium heat and lightly grease the skillet.
  • Pour about 2 tbsp of batter and spread .Consistency should be of thick pancake.
  • Pour little oil around Uttapam. Let it cook for about 2 minutes and flip them over. Bread Uttapam should be golden brown from both sides and this should take about four minutes.
  • Serve it hot with your choice of chutney aside.

Notes:
Do not cook on high heat; otherwise, Uttapam will not cook through.
Uttapam can also be served as breakfast.
You can also use brown bread
Any vegetable can be used according to your preference.
